I just got a very nice set of pots and pans. They are all stainless and I want to baby them because I've wanted them for so long! I used a green Brillo pad on one that had burnt oil or something in it, and it took the finish down and made circular (scrub motion) marks. What is the best way to scrub them? To get the brown oil stains off?

Throw away the brillo and never use it on stainless steel again. I learned that the hard way.

I use those fine wire wool soap impregnated pads. I don't know what your brand would be, but they are called Poly Pads

I have all clad and all you need to do is wash it immediately after cooking with some soap and water. I don't use a brillo pad because it's too harsh. I use one of those sponges that has a scouring pad on the other side. It's very delicate and it doesn't scratch. Don't cook anything on high heat. Always use the proper amount of cooking oil, etc. Now that you have good cookware, you're right, you want to baby it. Enjoy!
P.S. William Sonoma is having a huge sale at Woodbury Common, NY. That is where I am from. We just bought 3 more pieces from there 50% off. They have never had a sale like that on All Clad. The Emerill Ware was 40% off. I wish that you could go. It's an outlet and if you have any outlets near you…go! It's so worth it.

Sorry you had to learn this one the hard way. Libby has the right idea if this is burnt on food – not grease.
If it is grease, your best bet is using Kosher salt and lemon. Cut a couple of lemons in half, rub one half over the burnt area, then sprinkle salt over the lemon. Next step is either use your fingers (you can use rubber gloves) or the lemon half and start scrubbing. This may be a lot of work, but it will help maintain the beauty of your stainless pots and pans.
Almost anything that is abrasive (scouring pads, steel wool, etc.) or has abrasives (scouring powders or gels) will cause your pans to be scratched. Even using stainless utensils. So they are a big no-no.
