I used ultrex but they're out of business?
I am partial to Tramontina. 18/10 stainless steel. They have vented glass lids (some pans also have steel solid lids) and aluminum encased in the bottoms for faster heating. This allows for lower heat when cooking also. You can check out their website.

I sure would like to help but the question is vague. Is this for home or commercial use? There are many mfg out there regretablly most are made in the far east so you need to trust the supplier.
